The Quest for My Favorite Breakfast Muffin
Back in middle school, on Wednesdays or Thursdays, we were treated to these incredible vanilla muffins packed with mini chocolate chips. They were always freshly baked and so hot they were almost inedible at first. Super fluffy and moist, these muffins came in large white paper cups, similar to those used for ketchup but much bigger. The texture was soft enough that I could scoop them up easily with the plastic sporks provided. Each muffin had a slightly golden top with the ideal balance of crispy crust and fluffy interior. Honestly, I would trade just about anything to have those muffins again! I’m desperate to recreate that experience, but I can’t seem to find a recipe or a bakery that makes anything like them. If anyone has suggestions, please help me relive those muffin moments!

    – 1 cup mini chocolate chips

    Instructions:
    1. Preheat your oven to 375°F (190°C) and line a muffin tin with large paper liners.
    2. In a mixing bowl, blend together the flour, granulated sugar, brown sugar, baking powder, and salt.
    3. In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
    4. Pour the wet ingredients into the dry and mix until just combined. Fold in the mini chocolate chips.
    5. Divide the batter into the muffin cups, filling them about ¾ full.
    6. Bake for 18-20 minutes or until a toothpick comes out clean and the tops are golden.
    7. Let them cool slightly before enjoying!
